Egg Whites with Blueberry & Cinnamon

I want to thank Sam Talbot once again for a delicious start to my Monday morning.  I was a little skeptical because separating egg whites has always seemed like a “why on earth would I do that” action, but I did, and it was delicious. When my mother makes french toast, she scrambles up the rest of the mixture and it’s delicious, and this kind of tastes like that.  PLUS, it was delicious.  And I had to bolus more for my coffee than my breakfast.  And I’m not hungry (unless you count the “should I make myself another?”)
